"...Mandarin Oriental, Bangkok proudly announces the grand opening of its newest culinary destination, Alex Dilling at Lord Jim’s. This refined dining venue is led by world-renowned chef Alex Dilling, a two-Michelin-starred talent whose previous guest chef residency at Le Normandie left a lasting impression on Bangkok’s discerning gourmands. Now, Chef Dilling returns to the city in a more permanent capacity, introducing a concept that seamlessly blends Provençal culinary traditions with modern elegance..."
Officially launched on Friday, 16 May 2025, the restaurant takes over the legendary space of Lord Jim’s, a name long associated with excellence at Mandarin Oriental. Open exclusively for dinner from Friday through Tuesday, between 6:30 PM and 10:00 PM, Alex Dilling at Lord Jim’s is poised to become one of Bangkok’s most sought-after fine dining experiences.
At the heart of this new venture is a menu inspired by the traditions of Provençal cooking, elevated through Chef Dilling’s distinctive modern lens. The result is a culinary journey that embraces international influences while remaining grounded in classic French technique. The open kitchen concept, featuring dishes grilled over flame, contributes to an atmosphere that is both sophisticated and welcoming, marrying approachability with refined indulgence.
Moreover, when it comes to the highlight dishes that deserve to be savoured, Alex Dilling at Lord Jim’s sets the tone with an exquisite selection of appetisers. These include the refined Mozzarella Barbajuan, a delicacy reimagined with flair, accompanied by Organic Crudités with Caesar dip, and Japanese Sea Bream in Cucumber Gazpacho. These starters serve as an elegant prelude to the main course, marking the beginning of a truly memorable culinary journey.
For mains, signature dishes elevate the experience further. Highlights include Whole Roasted Chicken with Maitake Mushrooms and Foie Gras, or Grilled Dry-Aged Côte de Bœuf served with Café de Paris Butter, Bone Marrow, and Béarnaise. These plates are thoughtfully paired with indulgent sides such as Duck Fat Triple-Cooked Hash Browns, elevating the dining experience on every level.
The menu at Alex Dilling at Lord Jim’s reflects the foundations of classical French cuisine seamlessly intertwined with contemporary flair. The artistry extends beyond the plate with a meticulously curated wine list and a bespoke cocktail menu, crafted in collaboration with the hotel’s acclaimed The Bamboo Bar, an award-winning destination in its own right. This thoughtful pairing of flavours and libations enhances the culinary journey, offering guests a multi-sensory experience that is both refined and unforgettable.
No great experience is complete without a grand finale, and dessert at Alex Dilling at Lord Jim’s is designed to leave a lasting impression. Standout offerings include Banana Mille-Feuille to Île Flottante, both classic desserts reinterpreted with elegance and flair. A signature caviar service is also available for those wishing to elevate their evening even further.
“Mandarin Oriental, Bangkok has always felt like a second home. To take the helm at Lord Jim’s is a great honour. This is a restaurant with a remarkable legacy, one that now evolves into something more contemporary, more vibrant, but still deeply rooted in craft and care.”
